Why the Focus on Oysters?

Frequently, we are asked "Why the focus on oysters? Aren't you ignoring the other shellfish?"  

We like them all.

But their are two advantages that oysters bring to the table. The first is that oysters can create reefs on the bottom that provide shelter for 200 other species. The second is that the oysters are champions when it comes to filtration. They are far more effective at clearing the water.Their 40 gallons filtered per day humbles the 2 gallons of a mussel and the 5 of clam.
